Epoisses is made in Burgundy. It has a tender texture, with a Marc de Bourgogne washed rind that turns deep apricot with a wrinkled finish. It has a balanced flavour and the juicy, rich, savoury notes are a rare treat. The aroma can be contained by wrapping the cheese first in wax and then newspaper. A well-respected cheesemonger once said of Epoisses: ‘Everything you know about eating will be redefined with your first taste’.
Ideally pair with Burgundy reds.
