This very light, delicately flavoured young goat cheese with a smooth, firm and creamy texture.
Bouyguette is formed by hand and is moulded in a linen (one notes the mark of the folds in impression on the rind of the cheese). Its shape is original and decorated with a bit of rosemary which scents it beautifully. It comes from Tarn Garrigues du Midi. The area north of Toulouse.
To drink: White and dry. Sancerre and the like from the Loire is great company for this cheese.
