Pasteurised cow’s milk

Soft cheese washed in Marc de Bourgogne to give the moist wrinkled orange rind. Related to Epoisses, but more stout in appearance. A melting, flaky textured pate, strong and rather vibrant in flavour, with notes of chocolate and peanut, finishing with a juicy, buttery finish. This is an elegant cheese to be enjoyed with fine wines from Burgundy. We have often paired a big Burgundian white as well as a Santenay, which surprisingly works very well.
