This is the Champagne region’s most famous cheese. It has a luxurious texture and is often mistaken for a triple creme cheese but, in fact, is only double creme. It is rich with hints of mushrooms and has a melt-in-the-mouth texture. It was made to pair well with Champagne and is also a perfect cheese for the dessert course.
There is an entire museum in France dedicated to this cheese, you can read about it here.
This cheese serves as a layer in several of our cheese wedding cakes.
