Stichelton a raw milk blue cheese made by hand at Collingthwaite Farm in Nottinghamshire, using unpasteurised milk from the farm’s own herd. The curd is hand-ladled and hand-salted, and the cheese is matured for several months. Rich and savoury, with a slow, sweet finish.
