Description
This is a small bloomy-rind cheese made in the Causses, Aveyron, by Rosine Dombres and matured by Hervé Mons. This is one of Frances oldest cheeses, though it is seldom sold outside of France. The texture is reminiscent of velvet and the flavours are sweet and a bit nutty.
