Description

Created in Cork by Dutch couple Helene and Dick Willems, now made by their son Dicky and his wife, Sinead. This is a Gouda-style cheese that has been matured for a minimum of 6 months. It has a rich, nutty flavour, with a slight caramel finish.  Perfect for cooking because it grates easily and melts well, although equally delicious on a cheese board.

Try pairing with a Tawny Port or a full-bodied red wine.
