This older version of Comté is affineured by Jean-Charles Arnaud in the Jura. The Arnaud family have been selecting and maturing cheeses traditionally for more than 100 years. They have won more gold medals than any other dairy in France. At 24 months, it has a spicy yet slightly sweet flavour and an extremely rich texture.
