Description
Description
Produced in the Massif du Jura, Comté is one of France’s most important cheeses. The French eat it at any time of day, including breakfast. The large wheels of cheese are matured for at least 4 months but can be matured for up to 36 months. This Comté is matured for around 10 months.
The wheels are brushed with brine, which forms a crust over time, developing Comté’s unique texture and range of complex flavours which are nutty, fruity, toasty.
Try with Vin Jaune.
Read a blog post written by one of our favourite cheesemakers, David Jowett. He visited Marcel Petit who matures this cheese, whilst he was still training to be a cheesemaker. You can read about his adventures here.
