This cheese cake serves 130-180 people
Base tier: 34cm diameter
Fifth tier: Ashcombe (roughly 6kg)
An English Morbier style, springy texture and gentle flavour with nutty notes and a characteristic layer of edible ash running through the centre of the cheese.
Cow, pasteurised
Fourth tier: Saint Nectaire (roughly 1.5kg)
Made from the rich milk of the Salers cows. It has a silky texture and deep spicy, walnut flavours.
Cow, unpasteurised
Third tier: Brie Fermier (roughly 1kg)
A mild, creamy, gooey brie with a bloomy rind. Interesting, complex and funky.
Cow, unpasteurised
Second tier: Reblochon (roughly 450g)
A relatively gentle washed rind cheese with a smooth texture and delicate flavour.
Cow, unpasteurised
Top tier: Chaource (individual cheese)
A rich, indulgent, double-crème cheese with a melt-in-mouth texture.
