Created by Derrick and Meg Gordon and now made by Siobhán Ní Gháirbhith at Inagh Farmhouse Cheese in County Clare. This log-shaped cheese is perfect for grilling for salads. Its dense, fudgy texture and yeasty, creamy flavours make it ideal on a cheeseboard. It is available in rather small numbers, but when we can get it, it is a firm favourite!
