The Ferguson family have worked Gubbeen Farm in West Cork, Ireland for many generations. But it was daughter-in-law Giana and William Ferguson, her father-in-law who came up with Gubbeen Cheese.
The farm over looks the Atlantic Ocean and many members of the family are involved in cheese making, salad and herb growing and charcuterie making. It’s an idyllic spot and set up – and the cheese created there reflects this.
Gubbeen is a semi-soft washed rind cheese boasting a medley of savoury, nutty and fungal flavours and a bouncy, pliant texture with a pleasing bite at its pink rind.
