Blackmount- Goat’s Milk – Unpasteurised
Pyramid shaped lactic goats milk cheese made from raw milk and rubbed in ash, smooth citric flavour breaks down from the edges as it matures.
Handmade by Selina Cairns and her team at Errington Dairy in Lanarkshire, Scotland. With a striking pyramid shape and blue/black rind, these goats cheeses are chalky white in the centre and typically produce a mature and robust flavour.
