Manchego is Spain's most famous cheese and is easily identified by its unique crosshatch pattern, traditionally created by plaited esparto grass moulds. Today, the cheesemakers use specially designed plastic moulds to create the same effect. Manchego has a sharp, nutty taste with sheep aromas. This is version is semi-curado, which means that it has more delicate flavours than a curado Manchego. If you prefer complex, rich flavours, please select either Grazalema, or Zamarano instead.
