A springy texture and gentle flavour with nutty notes and a characteristic layer of edible ash running through the centre of the cheese.
Fourth tier: Saint Nectaire
Made from the rich milk of the Salers cows. It has a silky texture and deep spicy, walnut flavours.
Third tier: Fougerus
A Brie-like cheese with earthy characteristics, a buttery mouthfeel and rich, mushroomy flavours.
Second tier: Reblochon
A relatively gentle washed rind cheese with a smooth texture and delicate flavour.
Top tier: Chaource
A rich, indulgent, double-crème cheese with a melt-in-mouth texture.
