This lovely fresh cheese is made by Joan Cross in Barnard Castle, County Durham. The recipe was handed down from her grandmother who made this cheese for her family on their farm. Related to Wensleydale and Swaledale, it is a typical example of cheeses that farmers have made for their families for hundreds of years. It is delicate and buttery with a light tanginess.
