The Colston Bassett Dairy is in Nottinghamshire. The dairy has sourced its milk from the same farms since 1913. It is one of the smallest dairies producing Stilton and the cheeses are matured for eight weeks, giving it a creamy, crumbly texture and a rich and buttery flavour.
