This Asturian cheese is famous for being amongst the strongest blue cheeses made. The blue striations tend to be throughout the cheese, an effect known as 'bluing out' the cheese. The texture and mouthfeel is dryer than many other blue cheeses, and the sensation is intense. The flavours, mostly of cocoa, and dark berries are deep and complex. This is not a cheese for the feint-hearted!

Pair with Pedro Ximenez sherry for a truly incredible experience.
